Chicken Nuggets rolled in crushed BBQ Chips

Ingredients
  

  • 3 lbs. Chicken breasts or thighs *
  • 1 bag BBQ Potato Chips (lrg.) **
  • 1 can Evaporated Milk (sml.)
  • 1/2-1 blt. Sioux Z Wow Marinade ***

Method
 

To Marinate:
  1. Mix Sioux Z Wow with 1 small can of evaporated milk in a zip top bag.
  2. Add chicken and marinate for 1 hr in refrigerator.
To Cook:
  1. Gently roll marinated chicken pieces in BBQ potato chip crumbs.
  2. Place on cookie sheet and bake in a 325F oven for about 20 min. depending on cube size.
  3. Avoid over cooking, charring or darkening potato chip crumbs.
To Serve:
  1. Serve crispy HOT!!! Very moist and delicious!

Tuna Tar tare with Fresh Ginger on Daikon Radish

Ingredients
  

  • 1 lb. Ahi Tuna, Sushi grade chopped
  • 1 tbsp Sioux Z Wow Marinade
  • 1 tbsp Ginger, minced
  • ½ Lemon juiced
  • 1/8 tsp Five Spice Powder
  • Salt and Pepper to taste
  • 1 Daikon Radish or Cucumber *
  • 8 Parsley stems chopped

Method
 

To Make:
  1. Combine Sioux Z Wow, ginger, lemon juice, and Five Spice Powder.
  2. Add Tuna. Season with salt and pepper. Chill 1 hr.
To Serve:
  1. Place a small portion of Tuna Tartare in the middle of each veggie disk.
  2. Scatter parsley over the serving platter.

Cajun Shrimp with Cayenne, Celery & Peppers

  • 16 Jumbo Shrimp *
  • 1/4 tsp Cayenne Pepper
  • 4 tbsp Sioux Z Wow Marinade

Method
 

To Marinate:
  1. Place Sioux Z Wow in a bowl.
  2. Add cayenne pepper & stir. Add shrimp & toss to coat. Allow to sit at room temp.
To Cook:
  1. Meanwhile, heat a cast iron skillet. Toss the shrimp & Sioux Z Wow into the pan all at once. Stir shrimp constantly to cook all sides.
To Serve:
  1. Serve with the caramelized sauce over rice. (These shrimp are also dynamite skewered and grilled).

  • 4 tbsp Poupon Mustard
  • 2 tbsp Sioux Z Wow Marinade
  • 2 tbsp Apricot Preserves
  • 1 tsp Ground Ginger

Method
 

To Make:
  1. Mix all ingredients in a bowl with a whisk until thoroughly blended.
Serving Suggestions:
  1. Makes an exciting glaze for Turkey Tenders or for roasting a Duck.
  2. Use as a dipping sauce for Chicken or Pork Satays and even totellini.
  3. Also delicious as a sauce for Vegetables.

Easy Avocado Salad

Ingredients
  

  • 4-6 Pretty Lettuce leaves *
  • 2-3 Ripe Avocados
  • 1 Lemon cut in half
  • 4-6 oz. Sioux Z Wow Marinade
  • 4-6 Parsley sprigs

Method
 

To Make:
  1. Cut avocados in halves or thirds.
  2. Remove seed by forcefully inserting butcher knife into seed, then twist.
  3. Arrange each avocado half on a lettuce leaf and sprinkle with lemon juice to prevent browning.
To Serve:
  1. Fill the avocado well with Sioux Z Wow. Garnish with parsley. Chill until served.

All Of Ewe - Oven Roasted Leg of Lamb

Ingredients
  

  • 6–7 lb. Leg of Lamb (boned)
  • 1 btl. Sioux Z Wow Marinade
  • 20 Garlic Cloves
  • 1 bunch Fresh Mint chopped
For Chutney:
  • ¼ cup Sioux Z Wow Marinade
  • ¼ cup Onion, finely chopped
  • ¼ cup White Wine Vinegar
  • ¼ cup Apple Jelly (Mint Jelly for lamb)
  • ¼ cup Apricots chopped
  • ¼ cup Prunes chopped
  • ¼ cup Golden Raisins or Craisins chopped
  • 3 tbsp Crystallized Ginger chopped
  • ¼ cup Orange Liqueur to soak fruit (optional)

Method
 

To Marinate:
  1. Pierce leg randomly with knife tip and insert garlic. Place leg in ziplock bag. Add Sioux Z Wow. Close bag and rub into crevices.
  2. Marinate 24 hrs in fridge. Turn frequently.
To Roast:
  1. Preheat oven to 450F.
  2. Remove lamb, roll and tie. Place in a buttered baking dish, Bring to room temp. Roast uncovered for 15 min.
  3. Lower temp. to 325F, pour marinade from bag over leg and cook 15 min./pound (or until meat thermometer reads 135F for med. rare).
To Serve:
  1. Let stand for 10-15 min. before carving.
  2. Garnish platter with mint. Serve with Garlic mashed potatoes, green beans and Exotic Fruit Chutney.
To Make Chutney:
  1. Soak fruit and ginger in liqueur.
  2. In a small saucepan, combine the onion and vinegar. Bring to a boil. Then reduce heat, cover and simmer for 3 min.
  3. Add jelly. Let melt. Add Sioux Z Wow, dried fruits and ginger.
  4. Stir to mix well. Pour into bowl, cover and chill.

Slow Baked & Grilled Baby Back Ribs | St Louis or Spare Ribs

Ingredients
  

  • 2 racks Baby Back Ribs 13 ribs/rack
  • 1 btl Sioux Z Wow Marinade
  • 1 can Chicken Broth 14oz

Method
 

To Marinate:
  1. Cut racks to fit into 1 or 2 zip top bags. Put ribs in the bag(s) and distribute marinade.
  2. Let marinate in refrigerator for as long as you can (overnight or even better, 2 to 4 days). Turn when convenient.
To Bake:
  1. Preheat oven to 325 F for fast cook or 275 F for slow cook.
  2. Line a baking pan (a cookie sheet with sides) with aluminum foil.
  3. Remove ribs from the zip top bag and place on the lined baking pan, meaty side up. Pour chicken broth onto the baking pan and add enough water to just cover the bottom of the pan. Cover baking pan and ribs with foil, tightly.
  4. Place in oven. For ‘fast cook’ bake 1hr at 325F or for ‘slow cook’ 2hrs at 275F.
Grill or Broil to Glaze:
  1. Have BBQ grill already hot.
  2. Take the ribs out of the oven and remove foil from ribs. Spoon fresh marinade over the ribs.
  3. Place back under the broiler or on the grill, meaty side down, for 3-5 min., until glazed or grill marked.
To Serve:
  1. Serve right off the grill either as a slab or cut the ribs into single ribs and pile them on a platter for self serve.
  2. Serve with plenty of napkins and lots of room for compliments!

Crab Stuffed Mushrooms

Ingredients
  

  • 24 Mushrooms
  • 15 tbsp Sioux Z Wow Marinade
  • ½ Red Onion finely diced
  • ½ Red Pepper diced
  • Ginger, diced
  • 2 tbsp olive oil
  • ½ cup Fresh Parsley chopped
  • 6 oz. Crabmeat
  • 1 cup Parmesan cheese
  • ½ cup Breadcrumbs
  • 1 tbsp Fresh Rosemary chopped
  • 1 tbsp White Wine
  • Salt & Pepper to taste

Method
 

  1. Snap stems out of the mushroom caps. Marinate caps in 12 T. SZW.
  2. Chop stems.
  3. Heat olive oil and saute onion, pepper, and ginger. Add chopped stems and cook 4 min. Add parsley and rosemary.
  4. Cook 2 min. Turn off heat. Mix in 3 T. SZW, breadcrumbs, cheese and crab. Stuff caps.
  5. Bake at 350 for 20 min. & serve.

Eggplant Sandwich with Roasted Vegetables & Feta Cheese

Ingredients
  

  • 1 lg. Eggplant sliced into ¼” discs
  • 1 Green pepper sliced in thin rings
  • 1 Red pepper sliced in thin rings
  • 1 Yellow pepper sliced in thin rings
  • 1 lg. Tomato thinly sliced
  • 1 sm. Red Onion sliced thinly
  • ½ lb Feta Cheese sliced
  • 1 bn. Basil cleaned and stemmed
  • 6 oz. Sioux Z Wow Marinade
  • 1 tbsp Olive Oil

Method
 

To Marinate:
  1. Brush each disc with Sioux Z Wow and place into a Zip top bag. Pour in the rest of the marinade and olive oil, moving the discs around to coat each side.
  2. Marinate for 1 to 3 hours.
To Assemble:
  1. Using the eggplant discs for top and bottom, assemble all the ingredients like a sandwich.
To Grill:
  1. Place in a wire basket over med/high heat and turn several times.
or To Bake:
  1. Put in the oven at 350 F for 45 min.
To Serve:
  1. Garnish with the remaining basil leaves and serve hot.

Grilled or Roasted Tri-Tip Beef Roast

  • 3 lbs Beef Tri–tip (bottom butt sirloin)
  • 2/3 btl Sioux Z Wow Marinade

Method
 

To Marinate:
  1. Place tri-tip in a zip lock bag and add Sioux Z Wow. ♥Sioux Z’s secret: for any large piece of meat, marinate for 3-4 days!
Tip 1, Gas Grilling:
  1. Preheat 2 burner gas grill. Turn one side off and put tri-tip on that side, fat side up. Cook 45 min. with lid down.
Tip 2, Charcoal Grilling:
  1. On charcoal grill, place briquets on sides of the kettle and put a drip pan in the middle to catch fat and keep briquets in place.
  2. When briquets are hot place tri-tip in center of grill, fat side up. Cook 45 min. with lid on and all vents open.
Tip 3, Oven Baking:
  1. Preheat oven to 500F. Put tri-tip in for 15 min. and then turn down to 350F for another 25-30 min.
To Serve:
  1. Slice diagonally, into 1/2" slices, across the grain of the meat. Serve with a baked potato, Mushroom Poppers and a green salad.
