Sioux Z Wow Glazed Shrimp and Pineapple Skewers

To Make:
  1. In a saucepan, stove top, bring the entire bottle of Sioux Z Wow to a simmer.
  2. Stirring constantly, reduce the Sioux Z Wow until it is thick and adherent.
  3. When the Sioux Z Wow is thick and bubbly, add half the cubes of pineapple. Toss the pineapple in the Sioux Z Wow while continuing to heat through.
  4. When thoroughly heated and coated, spear each cube onto a skewer and keep warm.
  5. Add the shrimp, open faced into the sauce and cook gently, turning once when the shrimp turn pink and curl into a rams horn shape.
  6. When just cooked, skewer one shrimp onto each skewer behind a cube of pineapple.
  7. Add the remaining pineapple to the hot Sioux Z Wow Glaze pan and toss, making sure to coat all side and heat through.
  8. Skewer a final cube of pineapple behind each shrimp.
To Serve:
  1. Platter all the skewers, pour any remaining Glaze over the tops of the presentation and serve immediately with lots of napkins.

To Marinate:
  1. Place the shrimp in a zip top bag and add Sioux Z Wow Gourmet Marinade.
  2. Seal the bag after squeezing the air out.
  3. Move the shrimp around with your fingers to spread marinade over them.
  4. Let marinate in refrigerator for 10-15 minutes.
To Make:
  1. Blanch Snow peas (maybe one minute) and then quickly place them in ice water to stop cooking.
Assemble all skewers as follows:
  1. Wrap one snow pea around a scallop and then wrap a shrimp around the snow pea.
  2. Secure by threading a skewer, first through the tail of the shrimp and then on through the snow pea/scallop/snow pea and then through the top of the shrimp body.
To Cook:
  1. Remove the broiler pan from your oven and turn the oven on to Broil.
  2. Place each set of skewered shrimp with the shrimp in the center of the broiler pan and the skewer sticks toward the outer edge. (You may want to cover the naked sticks to prevent burning.)
  3. Broil for 2 minutes, then turn the skewered shrimp over and broil 2 minutes more.
To Serve:
  1. Place one of the thin sliced red pepper rings in the center of a plate.
  2. Place two shrimp skewers, facing each other to form a heart shape, on top of the red pepper.
  3. Drizzle Cilantro Silk Sauce over shrimp.
  4. Place two sprigs of fresh cilantro down the center of the heart shaped presentation and serve.
  5. For an entrée, place four or more shrimp skewers on top of a serving of rice. Generously drizzle the Cilantro Silk Sauce over the shrimp.
  6. Garnish with chopped green onions sprinkled over the top and a few thin slices of red and yellow peppers.
To Make Cilantro Silk:
  1. Put all ingredients in a food processor and pulse until smooth."

To Marinate:
  1. Place shrimp in a zip top bag with 8 T. Sioux Z Wow Marinade.
  2. Leaving the top greens on, cut the pineapple in half lengthwise. Cut off the skin, top and bottom of one half.
  3. Slice this half in ½ - ¾ inch slices and then into 24 bite size cubes. Put the Pineapple cubes in a separate zip top bag and add the remaining Marinade.
  4. Marinate about an hour at room temp.
To Cook:
  1. Skewer Shrimp through tail and body and then add a Pineapple cube. Grill over med. hot coals for 4-5 min./side or broil for 3-4 min./side.
  2. Baste with Sioux Z Wow.
To Serve:
  1. Wash the Pineapple half. Place in the center of a serving platter, cut side down.
  2. When done, take the skewers off the grill and stick them into the back of the Pineapple like a porcupine. Sprinkle chopped onion over the entire plate and serve hot.
  3. For a fabulous entree, serve 4-6 skewers over rice.

To Marinate:
  1. Put shrimp in a zip top bag with 1/2 cup Sioux Z Wow & marinate.
  2. Place pineapple spears in a separate bag & marinate in 1/4 cup S Z W.
To Assemble:
  1. Cut each spear of pineapple into 4 cubes.
  2. Fold & tuck a shrimp around a cube of pineapple, then wrap both in a strip of bacon. Secure with a toothpick or skewer.
To Cook:
  1. Place all rumaki on foil lined baking sheet. Bake at 400 for 5-7 min., turning once, making sure bacon is crisp.
To Serve:
  1. Serve hot with plenty of napkins & dipping sauce made of Apricot Preserves & remaining Sioux Z Wow, well blended

To Cook:
  1. Melt butter in a saucepan. Add tequila, lime juice, Sioux Z Wow Marinade and cream.
  2. Bring to a boil. Cook until sauce starts to thicken.
  3. Add bell peppers and cook until peppers are slightly limp and the sauce is thick and creamy.
  4. Add shrimp and sauté until cooked through, about 5 min.
  5. Cook pasta al dente according to instructions. Drain and keep warm.
To Serve:
  1. Pour sauce over well-drained fettuccine and toss.
  2. Garnish with green onions. Serve hot with crusty bread.

For Frisky Fruit Salsa:

To Make:
  1. Marinate shrimp in a zip top bag with Sioux Z Wow.
  2. In a bowl, toss fresh fruit, peppers, onions and cilantro with SZW and lime juice.
To Cook:
  1. Coat entire saute pan with olive oil and heat to very hot. Pour in shrimp and Sioux Z Wow Marinade.
  2. Stir constantly and cook over med. high heat until all shrimp turn pink, (about 5 min.). Remove shrimp from pan and drain. Spread on a cookie sheet and refrigerate to cool.
To Serve:
  1. Spoon Fruit Salsa into a stemmed cocktail glass. Attach 6-8 shrimp onto the rim of each glass. Garnish with orange slice or lime twist.
