Honey Holiday Ham with Orange Bourbon Glaze

To Cook:
  1. Preheat oven to 325F.
  2. Place ham on a rack in a shallow roasting pan.
  3. Insert meat thermometer into center away from bone. Bake until internal temp. is 130 degrees. (about 2 hours)
To Make Glaze:
  1. Combine Sioux Z Wow and orange juice in a sauce pan with a whisk.
  2. Slowly whisk in honey over low heat. Raise heat to medium.
  3. Bring to a simmer and cook uncovered, stirring frequently.
  4. Reduce liquid to approximately ½ or 1C.
To Serve:
  1. Take ham from oven.
  2. Using a sharp knife, cut/lift off skin and fat. (A canned ham skips this step).
  3. Make diagonal cuts to form a diamond pattern into the top of the ham. Brush Ham liberally with the Orange Bourbon Glaze.
  4. Put back in the oven for a few (5_10) minutes.
  5. Remove and brush twice more with the glaze. Slice into portions and platter or plate to serve with, of course, more “sauce on the side”.

To Marinate:
  1. Place chops in zip top bag and cover with Sioux Z Wow.
  2. Let chops marinate at least overnight, turning bag periodically.
To Grill:
  1. Remove chops from bag.
  2. Grill over med. to hot coals 6-8 min. per side.
  3. After turning, pour a bit more marinade over the chops.
To Serve:
  1. Garnish with Sage.

To Marinate:
  1. In a zip top bag, marinate tenderloin in Sioux Z Wow Marinade at least overnight or even for 2-3 days.
To Cook:
  1. Preheat oven to 400 F.
  2. In a skillet, heat olive oil and sear tenderloins on all sides. Line a baking pan with foil.
  3. Place seared tenderloins in the baking dish and cover the bottom with the wine and chicken broth.
  4. Bake at 400 F for about 10-12 minutes (147 F internal).
To Serve:
  1. Place tenderloins on a cutting board and let rest for 5 minutes before slicing.
  2. Plate and serve with Sioux Z Wow Exotic Fruit Chutney.

  1. Cut pork into lengthwise strips. Marinate in SZW for at least 1 hour.
To Cook:
  1. Thread strips onto bamboo skewers, then twist to make spirals. Place on cookie sheet. Bake at 350° for 4-6 min. per side.
To Serve:
  1. Serve with more Sioux Z Wow or “Thai-This” Peanut Sauce for dipping.
To Make Peanut Sauce:
  1. Whisk ingredients together until well blended.

To Make:
  1. Break eggs into a bowl. Beat with a fork. Place breadcrumbs in a separate flat bottom bowl.
  2. Heat skillet while dipping each pork chop into egg and then rolling it in bread crumbs.
  3. Brown both sides of pork chops in skillet. Pour chicken broth down side of pan.
  4. Add Sioux Z Wow and gently stir to blend. Simmer pork chops one hour.
To Serve:
  1. Serve with parsley potatoes on a bed of watercress sautéed in olive oil and fresh garlic.

To Marinate:
  1. Clean pork roast. Place in large zip lock bag. Pour Sioux Z Wow and bourbon over roast. Close bag, removing as much air as possible.
  2. Then rub marinade over entire roast. Let marinate in refrigerator overnight. Note: 3-4 days is optimal.
To Cook:
  1. Preheat oven to 325F.
  2. Remove roast from bag and place in a baking dish. Cover with a foil tent leaving 2” air space.
  3. Bake 20 min. per lb. basting periodically with Sioux Z Wow.
To Brown:
  1. Remove tent for last 20 min.
  2. Use a meat thermometer (160-165F) to insure doneness.
  3. Let stand 10 min. before carving.
To Serve:
  1. For Dinner Party, place on a platter and garnish for carving at the table.
  2. For Cocktail Party, dice and toothpick. Serve both with Sioux Z Wow Chutney.

To Cook Ham:
  1. Preheat oven to 325 F.
  2. Place the ham on a rack in a shallow roasting pan. Insert meat thermometer into center, away from the bone.
  3. Bake until internal temp. is 130 F (about 2 hours).
To Make Glaze:
  1. Combine all ingredients (except cloves) and bring to a boil while stirring.
  2. Reduce heat and simmer uncovered approx. 40 minutes until the glaze measures about 1 cup.
To Finish Ham:
  1. Take ham from oven.
  2. Using a sharp knife, lift off skin. Make diagonal 1 1/4 inch cuts into fat to form diamond pattern. Stud with whole cloves.
  3. Brush ham well with the glaze. Put ham back in the oven for another 25 minutes, basting with the glaze at least twice more.
To Serve:
  1. Remove ham and let rest 10 min. before slicing.
  2. Slice ham to desired thickness and plate or serve hot on a platter garnished with herbs. Serve with other holiday faire.

To Marinate:
  1. Place pork shops in a zip top bag. Mix Sioux Z Wow and ground cinnamon and pour over pork chops.
  2. Marinate at least 3 hours. (Over night is OK).
To Cook:
  1. Remove the chops and set aside. Pour the marinade from the bag into a sauté pan and add the apples, cinnamon sticks and apple juice.
  2. Heat to a simmer, while stirring, for 2-3 min. Stir in the cognac and then place the pork chops in the pan.
  3. Cook the pork chops in the sauce for 5-7 min. per side, covering to retain heat and moisture. Baste several times on each side.
To Serve:
  1. Plate each pork chop and garnish with sauce, apples, cinnamon sticks and cinnamon candies.
  2. Serve with creamy mashed potatoes in roasted red pepper bowls (Ahead of time, cut red peppers in half length wise, remove the seeds and roast in oven) and sautéed garlic snow peas.
  3. Add candlelight, a glass of Pinot Noir, soft music and one red rose. Mmmmmmmmmmm!
