Chicken, Mushroom and Ginger Lettuce Cups

Ingredients
  

  • 2 Chicken Breasts (or Tofu) 1 lb about
  • 12 T. Sioux Z Wow Marinade
  • 8-10 medium Mushrooms sliced
  • 1 in. Fresh Ginger peeled, minced
  • 2 T. olive oil
  • 8-12 leaves Iceberg Lettuce washed and spun dry

Method
 

To Marinate and Cook:
  1. (same as Stove Top Strips above).
To Make:
  1. Chop the cooked chicken finely.
  2. Heat olive oil in a skillet. Sauté onion & ginger 2-3min.
  3. Add mushrooms. Continue to cook until the mushrooms are soft.
  4. If moisture is needed, add a few tablespoons of water, wine or chicken broth.
  5. Add the chopped chicken and 4 T. Sioux Z Wow. Heat through.
To Serve:
  1. Spoon mixture into each lettuce leaf.
  2. Fold and serve.
  3. Or place leaves on a platter and the filling in a pretty bowl to allow guests self-assembly)
  4. Prepare yourself for compliments and take a bow!
