To Make Salad:
  1. Boil yams in chicken broth until tender.
  2. Place the cooked yams on a cookie sheet and chill.
  3. Place the chilled yams in a bowl and add the water chestnuts, red pepper and green onion.
To Make Dressing:
  1. In a separate bowl, whisk together dressing ingredients.
  2. Pour the dressing over the salad ingredients and toss to mix thoroughly.
To Serve:
  1. Chill and garnish with chopped green onion over the top.
For a Variation on a Theme:
  1. Toss the salad with Thai This Peanut Sauce but add several extra tablespoons of rice wine vinagar at the last minute.

To Make & Cook:
  1. Preheat oven to 350 F.
  2. Pierce potatoes with fork and bake for about 60 minutes or until done. Set aside to cool.
  3. Fry bacon pieces until crisp, about 5-7 minutes.
  4. Remove bacon to a paper towel lined plate to drain. Set aside.
  5. Cut each cooled potato in half. With a small dinner spoon scoop out flesh,leaving 1/8 to 1/4 inch thickness of flesh in each shell.
  6. Arrange shells on baking sheet, flesh sides up. Brush with 1/2 of the Sioux Z Wow.
  7. Bake at 350 for 15 minutes.
  8. Meanwhile, with a fork or clean hands, mix potato flesh with scallions, sour cream, buttermilk, cheese and bacon.
  9. Remove shells from oven. Stuff each with mixture.
  10. Bake another 10-15 minutes or until just beginning to brown on top.
  11. Brush tops with remaining Sioux Z Wow and bake 5 minutes more.
To Serve:
  1. Place on a pretty plate and devour hot!!!
