peeled, diced or large cubed

Chicken Broth
(enough to cover the potatoes)

Water Chestnuts
diced medium

Red Pepper

Instructions
To Make Salad:
Boil yams in chicken broth until tender.
Place the cooked yams on a cookie sheet and chill.
Place the chilled yams in a bowl and add the water chestnuts, red pepper and green onion.
To Make Dressing:
In a separate bowl, whisk together dressing ingredients.
Pour the dressing over the salad ingredients and toss to mix thoroughly.
To Serve:
Chill and garnish with chopped green onion over the top.
For a Variation on a Theme:
Toss the salad with Thai This Peanut Sauce but add several extra tablespoons of rice wine vinagar at the last minute.
