Black Bean & Tomatillo Salsa with Cilantro

Ingredients
  

  • 1 lb. Black Beans soak 8 hrs. & drain
  • 1 can Chicken Broth 49 oz.
  • 1 cup Sioux Z Wow Marinade
  • 1 lb. Frozen Corn blanched & cooled
  • 7 (2) Tomatillos (Tomatoes) diced
  • 1 Red Pepper diced
  • 1 Green pepper diced
  • 1 bunch Cilantro chopped (save 6-8 sprigs for garnish)
  • Salt and Pepper to taste

Method
 

To Make:
  1. Cook black beans in Sioux Z Wow and chicken broth over med. heat for 1½ hours or until tender, (add water if necessary).
  2. Let beans cool then drain. In a lg. mixing bowl, combine beans, corn, onion, tomatillo and peppers.
  3. Chill for several hours.
Serving Suggestions:
  1. Add chopped cilantro and garnish.
  2. Serve on a plate as a salad, in a bowl with tortilla chips for a scoop or over a baked potato.
  3. A mouth watering snack, side dish or a whole meal.
