Honey Holiday Ham with Orange Bourbon Glaze

To Cook:
  1. Preheat oven to 325F.
  2. Place ham on a rack in a shallow roasting pan.
  3. Insert meat thermometer into center away from bone. Bake until internal temp. is 130 degrees. (about 2 hours)
To Make Glaze:
  1. Combine Sioux Z Wow and orange juice in a sauce pan with a whisk.
  2. Slowly whisk in honey over low heat. Raise heat to medium.
  3. Bring to a simmer and cook uncovered, stirring frequently.
  4. Reduce liquid to approximately ½ or 1C.
To Serve:
  1. Take ham from oven.
  2. Using a sharp knife, cut/lift off skin and fat. (A canned ham skips this step).
  3. Make diagonal cuts to form a diamond pattern into the top of the ham. Brush Ham liberally with the Orange Bourbon Glaze.
  4. Put back in the oven for a few (5_10) minutes.
  5. Remove and brush twice more with the glaze. Slice into portions and platter or plate to serve with, of course, more “sauce on the side”.

To Make:
  1. Combine all ingredients in a sauce pan. Bring to a boil, stirring.
  2. Reduce heat and simmer uncovered approximately 40 min.
  3. If using, now add the bourbon.
Serving Suggestions:
  1. An excellent glaze for a baked ham, or for a roasted duck or game hens.
  2. Whip into mashed yams.
  3. Orange Ginger Sauce is delightful as a dipping sauce for wontons.
  4. Toss with steamed carrots or serve as a side sauce with green beans.
  5. Brush lightly on asparagus or summer squash.

To Make the Orange Ginger Sauce:
  1. In a saucepan, combine all ingredients except bourbon. Bring to a boil, stirring regularly.
  2. Reduce heat and simmer uncovered 40 min. Let cool and then stir in bourbon.
To Make Pumpkin Soufflé:
  1. Preheat oven to 350F.
  2. Place pumpkin in mixing bowl. Whisk in milk and butter.
  3. Whisk in eggs one at a time. Whisk as you slowly pour in 1 Cup of your Orange Ginger Sauce.
  4. Pour batter into a buttered baking dish.
To Cook:
  1. Bake at 350 for 30-40 min., (center is firm when done).
To Serve:
  1. Garnish top with crystallized ginger and strips of orange zest.
  2. For an aromatic treat, drizzle lightly with bourbon.
  3. Serve hot.

To Cook Ham:
  1. Preheat oven to 325 F.
  2. Place the ham on a rack in a shallow roasting pan. Insert meat thermometer into center, away from the bone.
  3. Bake until internal temp. is 130 F (about 2 hours).
To Make Glaze:
  1. Combine all ingredients (except cloves) and bring to a boil while stirring.
  2. Reduce heat and simmer uncovered approx. 40 minutes until the glaze measures about 1 cup.
To Finish Ham:
  1. Take ham from oven.
  2. Using a sharp knife, lift off skin. Make diagonal 1 1/4 inch cuts into fat to form diamond pattern. Stud with whole cloves.
  3. Brush ham well with the glaze. Put ham back in the oven for another 25 minutes, basting with the glaze at least twice more.
To Serve:
  1. Remove ham and let rest 10 min. before slicing.
  2. Slice ham to desired thickness and plate or serve hot on a platter garnished with herbs. Serve with other holiday faire.
