Instructions
To Make the Orange Ginger Sauce:
In a saucepan, combine all ingredients except bourbon. Bring to a boil, stirring regularly.
Reduce heat and simmer uncovered 40 min. Let cool and then stir in bourbon.
To Make Pumpkin Soufflé:
Preheat oven to 350F.
Place pumpkin in mixing bowl. Whisk in milk and butter.
Whisk in eggs one at a time. Whisk as you slowly pour in 1 Cup of your Orange Ginger Sauce.
Pour batter into a buttered baking dish.
To Cook:
Bake at 350 for 30-40 min., (center is firm when done).
To Serve:
Garnish top with crystallized ginger and strips of orange zest.
For an aromatic treat, drizzle lightly with bourbon.
Serve hot.
