Instructions
To Cook:
  1. Wash mushrooms and quarter. (You can use the already sliced mushrooms).
  2. Combine all ingredients except Parmesan. Saute on med. heat until ‘shrooms release their juices.
  3. Cook uncovered on low 30-40 min. or until juices are almost completely re-absorbed.
  4. While hot, place in a food processor with the Parmesan. Process until pate' is smooth.
To Serve:
  1. Serve hot or chilled with crackers, toasts or zucchini squash cut in rounds.

Instructions
To Prepare:
  1. Slice each chicken breast lengthwise forming a pocket for stuffing.
  2. Marinate in 1 C. of Sioux Z Wow Marinade for 1-3 hours.
To Cook:
  1. Saute mushrooms and onions in butter and 1/2 C. Sioux Z Wow Marinade until juices have been reabsorbed.
  2. Mix mushrooms with bread crumbs, Parmesan and Water Chestnuts.
  3. Fill each chicken breast pocket with the mushroom mixture and place on foil lined baking pan.
  4. Bake at 350 F for 20 min.
To Serve:
  1. Serve hot.

To Cook:
  1. Put Sioux Z Wow and wine or broth (and optional butter) in a sauce pan.
  2. Add mushrooms, bring to a boil and then reduce heat to simmer for 10-15min.
  3. Cook longer to make them even spicier.
To Serve:
  1. Serve hot next to a steak, chop or chicken.
  2. Or, at your next party, pour the cooked mushrooms and sauce into a chaffing dish and tooth pick them for an exciting appetizer.

To Marinate:
  1. Place chicken thighs in a zip top bag and add ¾ C. Sioux Z Wow Marinade.
  2. Marinate in refrigerator for a few hours or overnight.
To Cook Chicken:
  1. Preheat oven to 350F.
  2. Line a baking dish with foil. Remove chicken from the bag and arrange in the baking dish and bake for 30 min.
  3. Remove from the oven and set aside to cool. Finely dice the chicken and hold in a medium mixing bowl.
To Cook Mushrooms:
  1. Place the mushrooms in a sauce pan and add ¾ C. Sioux Z Wow and the white wine. Bring to a boil and then reduce heat to simmer. Stir frequently and cook until all the liquid has been absorbed and/or evaporated.
  2. Cool and then finely dice the mushrooms. Thoroughly combine the diced chicken and mushrooms.
To Make Empanadas:
  1. Roll out the pie crusts rather thin and cut as many 4 inch rounds as possible (12-16 with a large biscuit cutter).
  2. Place 1 heaping tablespoon of the filling into a pie crust round. Fold in half and crimp the edges with a fork or your fingers.
  3. Paint with softened butter. Repeat until all rounds are filled.
To Cook Empanadas:
  1. Preheat the oven to 400 F. Cover/line the baking sheet with foil or parchment paper and spray with vegetable oil. Place empanadas on the baking sheet and bake at 350 F for 15-20minuets.
To Serve:
  1. Garnish with parsley or cilantro and serve hot on a platter.
