Method
To Marinate:
- Put shrimp in a zip top bag with 1/2 cup Sioux Z Wow & marinate.
- Place pineapple spears in a separate bag & marinate in 1/4 cup S Z W.
To Assemble:
- Cut each spear of pineapple into 4 cubes.
- Fold & tuck a shrimp around a cube of pineapple, then wrap both in a strip of bacon. Secure with a toothpick or skewer.
To Cook:
- Place all rumaki on foil lined baking sheet. Bake at 400 for 5-7 min., turning once, making sure bacon is crisp.
To Serve:
- Serve hot with plenty of napkins & dipping sauce made of Apricot Preserves & remaining Sioux Z Wow, well blended
