Shrimp Rumaki with Pineapple

Ingredients
  

  • 1 C. Sioux Z Wow Marinade
  • 1/4 C. Apricot Preserves
  • 24 lg. Shrimp peeled, butterflied
  • 1/2 Fresh Pineapple peeled cored, & cut into 6 spears
  • 24 Strips of Bacon turkey or pork
  • 24 Skewers or Partypicks

Method
 

To Marinate:
  1. Put shrimp in a zip top bag with 1/2 cup Sioux Z Wow & marinate.
  2. Place pineapple spears in a separate bag & marinate in 1/4 cup S Z W.
To Assemble:
  1. Cut each spear of pineapple into 4 cubes.
  2. Fold & tuck a shrimp around a cube of pineapple, then wrap both in a strip of bacon. Secure with a toothpick or skewer.
To Cook:
  1. Place all rumaki on foil lined baking sheet. Bake at 400 for 5-7 min., turning once, making sure bacon is crisp.
To Serve:
  1. Serve hot with plenty of napkins & dipping sauce made of Apricot Preserves & remaining Sioux Z Wow, well blended
