04 Aug Black Bean & Tomatillo Salsa with Cilantro
Ingredients
- 1 lb. Black Beans soak 8 hrs. & drain
- 1 can Chicken Broth 49 oz.
- 1 cup Sioux Z Wow Marinade
- 1 lb. Frozen Corn blanched & cooled
- 7 (2) Tomatillos (Tomatoes) diced
- 1 Red Pepper diced
- 1 Green pepper diced
- 1 bunch Cilantro chopped (save 6-8 sprigs for garnish)
- Salt and Pepper to taste

Instructions
To Make:
- Cook black beans in Sioux Z Wow and chicken broth over med. heat for 1½ hours or until tender, (add water if necessary).
- Let beans cool then drain. In a lg. mixing bowl, combine beans, corn, onion, tomatillo and peppers.
- Chill for several hours.
Serving Suggestions:
- Add chopped cilantro and garnish.
- Serve on a plate as a salad, in a bowl with tortilla chips for a scoop or over a baked potato.
- A mouth watering snack, side dish or a whole meal.
