04 Aug Chicken, Mushroom and Ginger Lettuce Cups
Ingredients
- 2 Chicken Breasts (or Tofu) 1 lb about
- 12 T. Sioux Z Wow Marinade
- 8-10 medium Mushrooms sliced
- 1 in. Fresh Ginger peeled, minced
- 2 T. Olive oil
- 8-12 leaves Iceberg Lettuce washed and spun dry

Instructions
To Marinate and Cook:
- (same as Stove Top Strips above).
To Make:
- Chop the cooked chicken finely.
- Heat olive oil in a skillet. Sauté onion & ginger 2-3min.
- Add mushrooms. Continue to cook until the mushrooms are soft.
- If moisture is needed, add a few tablespoons of water, wine or chicken broth.
- Add the chopped chicken and 4 T. Sioux Z Wow. Heat through.
To Serve:
- Spoon mixture into each lettuce leaf.
- Fold and serve.
- Or place leaves on a platter and the filling in a pretty bowl to allow guests self-assembly)
- Prepare yourself for compliments and take a bow!
