04 Aug Earth Green Salad
Ingredients
Earth Greens Salad
- 1 bag Prepared greens baby lettuce or field greens
- ½ bunch Green Onions sliced thin
- 2 dozen Black olives Kalamata or ripe
- 12 oz. Goat cheese log
- 3 T. Herbs de Provence
- ÂĽ t. Cayenne Pepper
- ½ bunch Parsley chopped
Wow-Oui! Dressing
- 12 T. Sioux Z Wow Marinade
- 1 T. Herbs de Provence
- 2 T. Balsamic Vinegar
- 2 T. Olive oil optional

Instructions
- The first 4 steps can be done 1-2 hr ahead.
To Prep:
- Mix the Herbs de Provence, cayenne and half of the chopped parsley in a shallow bowl.
Remove the log of goat cheese from its wrapper and roll it in the Herbs de Provence mixture.
- Then cut the log into 12 equal rounds (discs).
- A helpful tip is to use a piece of dental floss to cut the log by holding it tautly on either side of the log and pulling the floss down through the cheese.
- Now coat each side of each round with the same Herb mixture.
- Place the rounds on a plate and cover with plastic wrap to chill.
To Make Dressing:
- In a small mixing bowl, make the Wow-Oui! Dressing, by mixing the ingredients with a whisk.
- Cover and refrigerate.
To Serve: Wash the salad greens and spin-dry.
- Place in a large bowl and add the olives, sliced green onions and remaining parsley.
- Cover and refrigerate.
When you’re ready to serve the salad course:
- Drizzle the Wow-Oui! Dressing over the salad greens several tablespoons at a time so as not to overdress, tossing after each addition.
- If you overdress a salad or would like to have a salad where each leaf is just lightly kissed by the dressing, put the greens back in the salad spinner and spin off the excess dressing.
- Portion the salad greens onto chilled plates.
- Top with a couple of the herbed goat cheese discs, drizzle lightly with Wow-Oui! and serve."
