Pasta Primavera with Fresh Veggies with an Asian Twist

Ingredients
  

  • 8-10 oz. Sioux Z Wow Marinade
  • 3 Garlic Cloves diced fine
  • 1 in. Fresh Ginger peeled & diced fine
  • 1 lg. Red Onion diced
  • 1 Green Pepper diced
  • 1 Carrot shredded
  • 2 Celery Stalks diced
  • 2 Broccoli Stems sliced thinly
  • 6 Interesting Mushrooms (shitake, oyster or porcini) sliced
  • 2 lg. Tomatoes diced
  • 1 can Water Chestnuts sliced
  • 1/2 C. Chicken Broth
  • 1/2 C. White Wine
  • 1 lb. Linguini
  • 1/2 Red Pepper sliced thin for garnish
  • 1/3 bunch Cilantro or Italian Parsley chopped for garnish
  • 1.2 C. Parmesan Cheese

Method
 

To Make:
  1. In a skillet, over medium heat, bring 2oz each of chicken broth and wine to a simmer.
  2. Sauté onion. Add garlic, green pepper, ginger, carrot and celery and cook for 5 minutes adding more liquid as needed.
  3. Add broccoli and cook 2 min. Add tomatoes, water chestnuts and mushrooms and cook 5 min.
  4. Add Sioux Z Wow Marinade. Mix well. Heat through. Cook Pasta al dente.
To Serve:
  1. Place pasta in a bowl and pour sauce over the pasta.
  2. Sprinkle chopped cilantro or parsley and the sliced red pepper over the top and serve with parmesan cheese.
