Roma Tomatoes
chopped

Tomato juice

Sweet onion
med., diced

Olive oil

Sioux Z Wow Marinade

Oregano

Parmesan cheese
Salt and Pepper to taste
Instructions
To Make:
Heat the oven to 350 F.
Wash the potatoes and pat dry with paper towel. Rub potatoes with butter on all sides and bake for 1 hour.
Mix together the tomatoes, onion, tomato juice olive oil, Sioux Z Wow and oregano. Add salt and pepper to taste.
Set aside while potatoes finish baking.
To Assemble:
When the potatoes are done, cut them in half lengthwise and crush the ‘meat’ with a fork.
Top with the tomato mixture generously. Sprinkle with parmesan cheese and place in the oven at 500 F for 3 min.
To Serve:
While piping hot,serve with a green salad and your favorite cold beverage.
