04 Aug Tortellini Pasta Skewers with 3 Dipping Sauces
Ingredients
- 2 packages Fresh Tortellini Pasta fillings of your choice one spinach & one egg
- 1 package Short bamboo skewers 4 or 6skewers
- 1 bunch Fresh Parsley stemmed (½ chopped, ½ flowerets)
- 1 head Pretty greens for garnish red leaf or bib lettuce

Instructions
To Cook:
- Cook the Tortellini according to the package instructions.
- Drain and let cool enough so they are comfortable to handle.
To Serve:
- Skewer 3 Tortellini to a stick, through the center, alternating colors.
- Place dipping sauce(s) in ornate bowl(s) in the middle of a serving platter.
- Arrange the pretty greens around the platter like the petals of a daisy.
- Place the Tortellini Totems in a spiral on the bed of pretty greens.
- Tuck parsley flowerets around decoratively.
- Sprinkle the platter with chopped parsley and serve.
And now for the SAUCES:
- For each sauce. mix all ingredients in a bowl with a whisk until throughly blended.Would you believe? That's it.
- Note: For a saucy kind of a group, you may want to double these.

- 2T. rice Wine Vinegar

Amazing Glaze
- 4T. Dijon Mustard
- 2T. Sioux Z Wow
- 2T. Apricot Preserves
- 1 t. Ground Ginger
