Instructions
To Prepare Portobellos:
Place them in a zip top bag. Add 1 cup of Sioux Z Wow Marinade. Make sure all the mushrooms are coated.
Set aside for 1+ hours. Add olive oil just before grilling.
To Make Sauce:
Whisk together ½ cup Sioux Z Wow marinade with ½ cup of mayonnaise.
To Make Portobello Platters:
Remove the mushrooms from the marinade bag and grill on a medium hot grill for 3-4 minutes per side.
Then place the grilled mushrooms on a foil covered baking sheet, stem side up and generously spoon on the Sioux Z Wow Silk sauce.
Now add the sliced tomatoes and the shredded cheese.
Decorate the top with confetti peppers. Turn on the broiler and broil for 3-5 minutes.
To Serve:
As appetizers, slice the Portobello Platters like pizza for great finger food.
As a vegetable side, serve whole with beef, pork or chicken.
As a vegetarian main course, plate 2-3 and garnish with chopped scallions and accompany with cornbread or polenta.
