Shrimp Rumaki with Pineapple
Sioux-Z-Wow's Saucy Nickname is
Pinapple Shrimp Rumaki
Serves 8
1 C. Sioux Z Wow Marinade
1/4 C. Apricot Preserves
24 lg. Shrimp, peeled, butterflied
1/2 Fresh Pineapple, peeled cored, & cut into 6 spears
24 Strips of Bacon, (turkey or pork)
24 Skewers or Partypicks
To Marinate: Put shrimp in a zip top bag with 1/2 cup Sioux Z Wow & marinate. Place pineapple spears in a separate bag & marinate in 1/4 cup S Z W.
To Assemble: Cut each spear of pineapple into 4 cubes.Fold & tuck a shrimp around a cube of pineapple, then wrap both in a strip of bacon. Secure with a toothpick or skewer.
To Cook: Place all rumaki on foil lined baking sheet. Bake at 400 for 5-7 min., turning once, making sure bacon is crisp.
To Serve: Serve hot with plenty of napkins & dipping sauce made of Apricot Preserves & remaining Sioux Z Wow, well blended .
