Pasta Primavera with Fresh Veggies with an Asian Twist
Sioux-Z-Wow's Saucy Nickname is
Pasta Primavera Califoriental
Serves 4
8-10 oz Sioux Z Wow Marinade
3 Cloves garlic, diced fine
1 in. Fresh Ginger, peeled & diced fine
1 lg. Red Onion, diced
1 Green Pepper, diced
1 Carrot, shredded
2 stalks Celery, diced
2 Stems Broccoli, sliced thinly
6 Interesting Mushrooms, sliced (shitake, oyster or porcini)
2 lg. tomatoes, diced
1 can Water Chestnuts, sliced
½ C. Chicken Broth
½ C. White Wine
1 lb. Linguini
½ Red Pepper, sliced thin for garnish
1/3 bunch Cilantro or Italian Parsley, chopped for garnish
½ C. Parmesan Cheese
To Make: In a skillet, over medium heat, bring 2oz each of chicken broth and wine to a simmer. Sauté onion. Add garlic, green pepper, ginger, carrot and celery and cook for 5 minutes adding more liquid as needed. Add broccoli and cook 2 min. Add tomatoes, water chestnuts and mushrooms and cook 5 min. Add Sioux Z Wow Marinade. Mix well. Heat through. Cook Pasta al dente.
To Serve: Place pasta in a bowl and pour sauce over the pasta. Sprinkle chopped cilantro or parsley and the sliced red pepper over the top and serve with parmesan cheese.
