Garlic Infused Roasted Leg of Lamb

It Had To Be Ewe ~ Leg of Lamb
Serves 6
6-7 lb. Leg of Lamb (boned)
1 Btl. Sioux Z Wow Marinade
1 Bunch Fresh Mint, chopped
To Marinate: Place leg in ziplock bag. Add 2/3 bottle Sioux Z Wow. Close bag and rub into crevices. Marinate 3-4 days in fridge. Turn daily.
To Roast: Preheat oven to 450F. Remove lamb from bag and place into a buttered baking dish. Bring to Room Temp. Roast uncovered for 15-20 min. Lower temp. to 325F. Spread the remaining marinade from bottle over the top of the leg and roast for 15 min./pound (meat thermometer reads 135F for med. rare).
To Serve: Remove from oven and let rest for 10 min. before slicing. Arrange slices on a platter or plate and garnish with mint. Serve with Sioux Z Wow's Exotic Fruit Chutney, garlic mashed potatoes and green beans.
